Litehouse, Inc. began in 1958 when Ed and Lorena Hawkins purchased a restaurant called Herschel's Lighthouse in Hope, Idaho, and renamed it The Litehouse. Ed Hawkins, a chef, created his now-famous blue cheese dressing at the restaurant.
